Honey Garlic Beef and Broccoli Sticky Rice

Honey and garlic is the ultimate combo when it comes to beef!

Ingredients
- 500g Beef Mince
- 180g Long Grain Rice, Washed
- 100ml Plum And Hoisin Stir Fry Sauce
- 1 Tablespoon Minced Ginger
- 6 Cloves Garlic, Minced
- 350g Broccoli, Chopped Into Florets
- 2 Tablespoons Rice Vinegar (Optional)
- 2 Tablespoons Dark Soy Sauce
- 2 Tablespoons Honey
- 1.2 Litres Beef Stock
- 4 Spring Onions, Chopped
- 1 Handful Fresh Coriander, Chopped
- 2 Tablespoons Oil, Sesame If You Have It
- Sesame Seeds, Chilli Flakes
Method
- Heat up a little oil in a large frying pan. Add the beef mince in with the garlic and cook over a medium heat for 5 minutes until brown. Add in the honey, ginger, soy sauce and rice vinegar and fry for a further 3 minutes then add the plum and hoisin sauce followed by the washed rice and fry for 1 minute.
- Add in the beef stock, mix well then cover with a lid and let it simmer over a low/medium heat for 20 minutes. Depending on how fast your rice is cooking, you may need to add more water to allow the rice to cook for the full 20 minutes. Meanwhile, add your broccoli florets to a saucepan of boiling water and cook for 5 minutes over a medium heat then drain. You don’t want them too soft!
- When the rice is cooked, add in the broccoli, the fresh coriander and chopped spring onion. Taste the rice and adjust to your liking, you may want to add hot sauce for spice, more honey for sweetness or soy sauce for saltiness then serve with sesame seeds if you have them.
