Healthy Summer Tacos

Meat-free healthy summer tacos filled with fresh veg and spices and wrapped in lettuce.

Ingredients
- 1 Tin of Chopped Tomatoes
- 1 Tin of Red Kidney Beans
- 1 Chopped Red Pepper
- 1 Tin of Sweetcorn
- Half a Pack of Mushrooms
- 2 Medium Red Onions Chopped
- 2 Garlic Cloves, Peeled and ¿nely Chopped
- 1 Tsp Chilli Powder
- 1 Tsp Ground Cumin
- 1 Tsp Ground Coriander
- Large Lettuce Leaves
Method
- Add some oil to your pan and cook your onions until soft, add in your mushrooms and red pepper with your garlic and spices.
- Add in a spoonful of water and cook down, once slightly soft add in your tin of chopped tomatoes and kidney beans.
- Simmer for 20 mins at a medium heat.
- Once done, take your large lettuce leaves (your healthy taco shell) and fill with your yummy filling!
- Top with a fresh squeeze of lime and a sprinkle of coriander to serve.
