Greek Chicken and Feta Burgers

A delicious twist on a traditional burger, perfect for BBQ season.

Ingredients
- 100g Feta Or Greek Salad Cheese
- 500g Chicken Mince
- 1 Egg
- Squeeze Of 1 Lemon
- 1 Tbsp Tzatziki
- 1 Handful Of Fresh Parsley, Finely Chopped
- 1 Tsp Of Smoked Paprika
- 1 Tsp Of Oregano
- 1 Tsp Garlic Powder Or Puree
- Brioche Burger Buns
- Cucumber, Sliced
- Tomatoes, Sliced
Method
- In a large mixing bowl, place the chicken mince, oregano, smoked paprika and garlic powder with the squeeze of lemon and tablespoon of tzatziki. Crack the egg and add all of that in with a teaspoon of salt and a little black pepper. I added 1 teaspoon of chilli flakes but if you have kids eating these you may want to leave them out.
- Add the Greek cheese to a blender with the liquid it comes in and a drizzle of olive oil and blend into a paste. You can also use a small bowl and fork to mash it into a paste.
- Add the feta cheese to the chicken mixture then using a spoon mix everything together. Wash your hands then when they’re still wet, separate the mixture into 4 balls (or 6 smaller ones).
- Use your hands to flatten them into burger shapes.
- Place these burgers onto a preheated BBQ and cook on both sides for 5 minutes. Alternatively, add them to a frying pan with a little oil and fry for 5 minutes.
- Add some mayo to the buns. Chop up your tomato and onion into slices and lay them on top. Add your cooked Greek burgers then top with a some fresh tzatziki, dice up your cucumber and add a few pieces on top of the tzatziki then crumble a little cheese and top with freshly chopped parsley and chilli flakes.
