Grape Parma Ham and Gorgonzola Pizza

A fruity twist on a bold-flavoured pizza.

Pizza Dough:
- 600g The Pantry Strong White Flour
- 1 x 7g Sachet The Pantry Dried Yeast
- ½ Teaspoon Salt
- 400ml Warm Water
- 30ml Specially Selected Olive Oil
Topping:
- 400g Green Grapes
- 90g pack Specially Selected Parma ham
- 2 x Medium Red Onions
- 1 x 200g pack Specially Selected Gorgonzola DOP Dolce
- 50g Specially Selected Vintage Cheddar Cheese
- 30g Specially Selected Parmigiano
- 60ml Specially Selected Olive Oil
- 20g Tomato Puree
- 1 x Teaspoon Stonemills Paprika
- 1 x Teaspoon Stonemills Dried Basil
- Black Pepper
Method
- Put the flour, salt and yeast into a large bowl.
- Pour over the warm water and olive oil – mix well .
- Turn out onto a slightly floured board and knead for about 10 minutes.
- Put back into a clean bowl and cover – allow to rest and rise for 15 minutes in a warm place.
- Meanwhile prepare the topping.
- Peel, half and thinly slice the red onions.
- Grate the cheddar and the parmesan cheese.
- Crumble the gorgonzola.
- Slice the grapes in half.
- Mix the remaining oil with the tomato puree, dried basil and paprika in a bowl.
- Preheat the oven to 240°c/450°f/Gas Mark 8.
- Cut the dough into 4.
- On a lightly floured surface – roll out the four pieces into 30cm rounds.
- Brush them with the tomato and herb oil.
- Divide the cheeses, grapes and sliced onions between them.
- Bake in the oven on trays for about 8 minutes.
- Rip the ham into smaller pieces – divide between the pizzas – return to the oven for as further 2 to 3 mins to crisp and then serve.
