Garlic and Parmesan Smashed Burgers

Ingredients  

  • 500g Beef Mince
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Garlic Powder
  • 8 Cheese Slices
  • 4 Brioche Buns
  • Butter For Toasting Buns
  • 2 Large Or 3 Small Onions, Sliced
  • 1 Teaspoon Sugar
  • 4 Tablespoons Mayonnaise
  • 1 Whole Bulb Garlic, Roasted
  • 1 Tablespoon Dried Parsley
  • 1 Tablespoon Melted Butter
  • 20g Grated Parmesan
  • 2 Tablespoons Lemon Juice
  • Salt
  • Oil
  • Salad (if using)

Method

  1. Trim the end off your garlic and drizzle a little oil inside the cloves. Wrap in foil and place in the airfryer for 30 mins on 200 degrees or a preheated oven for 40 mins on 200 degrees.
  2. Slice the onions and add to a frying pan with a splash of oil, sugar and salt and cook over a medium-low heat for around 20 minutes to caramelise them.
  3. Meanwhile, to a bowl, add the beef mince, onion and garlic powder and use your hands to combine then shape into 8 small golf ball sized balls and set aside.
  4. To a jug, add the garlic and parmesan mayo ingredients (without the roast garlic as that’s cooking), mix well and set aside.
  5. Spread a little butter over both sides of the burger buns and place face down in a large, hot frying pan for 1 minute to crisp them up then remove and set aside
  6. When the onions are done, remove them and pop them in a bowl ready to use shortly. If you are using any salad, prepare it now and add to the buns.
  7. Remove the roasted garlic from the oven and using a knife, squeeze the soft garlic cloves out. If they are not already a smooth puree, use the back of a knife and mash them up. Add this garlic into the mayo mixture and mix.
  8. Now you have everything ready, you can do the first 4 burgers. Add 4 balls to a hot frying pan with a splash oil and place a square of baking paper on top. Using a metal spatula or masher, press the baking paper down to make the ball flatten out in the pan. Keep flattening it until its round and thin. Remove the paper and do the other 4 balls. (It is possible to do this without baking paper, it just reduces any sticking).
  9. Let the burgers cook for 1 minute then flip them over, add cheese and let the other side cook. Remove and add two to each bun. Do the same with the 4 remaining burgers.
  10. Add some caramelised onions on top then spoon some mayo onto the burger lids then press them closed and enjoy!
