Crispy Beef Chow Mein

A delicious crispy beef chow mein perfect for a mid week treat!

Ingredients
- 500g Beef Mince
- 1 Pouch Chow Mein Sauce
- 4 Tbsps Of Dark Soy Sauce
- 1 Tbsp Garlic Puree
- 1 Tbsp Ginger Puree
- 250g Egg Noodles
- 4 Eggs
- 2 Handfuls Fresh Coriander
- 2 Spring Onions, Chopped
- Hot Sauce (Optional)
- Chilli Flakes (Optional)
- Oil
Method
- Place beef mince into a wok or frying pan with garlic, ginger and 2 tablespoons of soy sauce with plenty of oil and cook for 15 minutes until super crispy (All beef should be the same dark brown golden colour) Add in some chilli flakes if you like spice here too.
- When the beef is nearly finished, add your egg noodles to salted boiling water and cook for 4 minutes. Chop up your coriander and spring onions.
- Add your stir fry sauce to the beef with 2 more tablespoons of soy sauce. Add your drained noodles and coriander and spring onions and mix together.
- In another frying pan, add some more oil and crack 4 eggs and fry for a few minutes. A tip to cook eggs on the top without having to flip them is to add a tablespoon of water to the frying pan and cover it with a lid. The steam will cook the top of the eggs.
- Spoon the noodles into bowls and serve with the eggs, sunny side up. Top with chilli flakes and some more fresh coriander.
