Chunky Herb Salad with Whipped Feta Dressing.

Ingredients  

  • 200g Feta
  • 2 Tbsp Dijon Mustard
  • 200g Greek Yoghurt
  • 1 Garlic Clove
  • 1 Lemon
  • 90g Parsley
  • 60g Coriander
  • 30g Mint
  • 4 Sticks Of Celery
  • 2 Heads Sweet Gem Lettuce
  • 3 Tbsp Seed Mix
  • Pepper

From The Cupboard

  • Olive Oil
  • Salt

Method

In partnership with  Mob.

  1. Add half the feta to a food processor with the yoghurt, mustard, finely grated garlic clove and the zest and juice of the lemon. Whizz until smooth and scoop out into the bottom of a big salad bowl.
  2. Roughly tear the herbs straight into the bowl, cut up the celery into chunky slices (on the angle is nice!) and get them in there too.
  3. Scatter in the lettuce leaves and 2 tbsp of the seeds. Toss to combine, season to taste and get onto a big platter. Finish with the remaining seeds, feta cheese and a drizzle of olive oil.
