Chorizo Carbonara

A new pasta dish to impress.

Ingredients
- 60g Chorizo Slices, Chopped
- 5 Eggs
- 1 Tbsp Garlic Puree Or 4 Cloves Fresh Chopped Garlic
- 3 Tbsps Grated Grana Padano Plus A Little For Topping
- 1 Tsp Smoked Paprika
- 250g Spaghetti
Method
- Add your spaghetti to boiling salted water and cook.
- Meanwhile, add 5 eggs to a bowl and whisk. Add in the grana padano and smoked paprika and whisk until you get a paste consistency.
- Chop up your chorizo and place in a frying pan. If using fresh garlic, add that too. Fry until crispy then remove and set aside.
- When spaghetti is cooked, using a cup, remove some of the starchy pasta water (about 150ml).
- Turn off the heat completely. Add the hot spaghetti to the frying pan with the pasta water and the egg mix and mix together to cook the egg.
- Divide the pasta into bowls and top with crispy chorizo. Finish with a little grated grana padano and serve.
