Chorizo Carbonara

Recipe

A new pasta dish to impress.

Ingredients

  • 60g Chorizo Slices, Chopped
  • 5 Eggs
  • 1 Tbsp Garlic Puree Or 4 Cloves Fresh Chopped Garlic
  • 3 Tbsps Grated Grana Padano Plus A Little For Topping
  • 1 Tsp Smoked Paprika
  • 250g Spaghetti

Method

  1. Add your spaghetti to boiling salted water and cook.
  2. Meanwhile, add 5 eggs to a bowl and whisk. Add in the grana padano and smoked paprika and whisk until you get a paste consistency.
  3. Chop up your chorizo and place in a frying pan. If using fresh garlic, add that too. Fry until crispy then remove and set aside.
  4. When spaghetti is cooked, using a cup, remove some of the starchy pasta water (about 150ml).
  5. Turn off the heat completely. Add the hot spaghetti to the frying pan with the pasta water and the egg mix and mix together to cook the egg.
  6. Divide the pasta into bowls and top with crispy chorizo. Finish with a little grated grana padano and serve.
