Chilli Chicken Burger With Mango Slaw

Ingredients

  • 4 Boneless, Skinless Chicken Thigh Fillets
  • 1 1/2 Tsp Chilli & Garlic Seasoning
  • 1/2 Tsp Smoked Paprika
  • 1/2 Tsp Ground Cumin
  • 1/2 Mango
  • 1/4 Red Cabbage
  • 1/2 Onion
  • 15g Fresh Coriander
  • 1/2 Lime
  • 1/2 Iceberg Lettuce
  • 2 Avocados
  • 4 Brioche Buns
  • Pepper
  • Salt
  • Olive Oil

Method

  1. Place the chicken thigh fillets, garlic granules, chilli flakes, smoked paprika and ground cumin in a bowl. Season with salt and pepper, drizzle with olive oil and toss to coat.
  2. Thinly slice the mango, red cabbage and onion. Finely chop the red chilli. Pick the coriander leaves. Juice the lime. Transfer all those ingredients to a bowl, season with salt and pepper and toss well to coat.
  3. Cook the chicken in a pan or griddle over medium heat for 5 mins per side, or until cooked through. Transfer to a plate to rest.
  4. Meanwhile, shred the iceberg lettuce and mash the avocado.
  5. Toast the buns in a dry pan.
  6. To assemble, place the avocado mash at the bottom of each burger. Top with a handful of iceberg lettuce, followed by the chicken, then a handful of slaw and, finally, the top bun.
