Chicken Parm Sandwiches

Ingredients
- 4 Burger Buns
- 300g Chicken Fillets
- 3 Tablespoons Lemon Juice
- 200g Breadcrumbs Made From Stale Bread Or Crushed Cereal
- 150ml Mayonnaise Or Garlic Mayonnaise
- 1/2 Tin Of Chopped Tomatoes
- 1/2 Onion, Finely Chopped
- 50g Grated Parmesan
- 125g Fresh Mozzarella, Sliced
- 2 Cloves Garlic, Minced
- 1 Teaspoon Dried Basil
- 1 Teaspoon Basil Pesto
- Olive Oil
- Salt
- Pepper
Method
- Heat up some olive oil in a saucepan and add the chopped onion and a minced clove of garlic in with some salt and pepper and simmer for a few minutes. Add in a teaspoon of finely chopped fresh basil if you have it or dried basil if not, fry for 2 mins then add in the chopped tomatoes and let this simmer for a further few minutes then remove from the heat and set aside.
- Meanwhile, add the mayo to a small bowl with a teaspoon of basil pesto, lemon juice and a clove of minced garlic and stir
- Place the chicken fillets on a plate then place the breadcrumbs into a bowl and prepare another plate for when the chicken fillets have been coated. Add a little mayonnaise onto each fillet and use the back of a spoon or brush to spread it over thinly then turn all chicken fillets over and do the same to the other side.
- Pass each chicken fillet through the breadcrumbs on both sides, shaking off any excess then place them on the spare plate.
- Preheat the grill on the oven to a medium heat. Heat up plenty of oil in a large frying pan, the base of the pan should be covered in oil. Place the coated chicken pieces in and fry on both sides for 5 minutes until golden and crispy then place on a plate, sprinkle lemon juice over them all and set aside. Preheat the grill to a medium high heat whilst they’re cooking and slice the mozzarella into 8 pieces.
- Spoon some of the tomato sauce onto the chicken pieces then top with two slices of mozzarella. Cover everything in plenty of parmesan cheese then place the chicken into the grill for 5 minutes. Whilst the cheese is melting, toast the buns in a frying pan with a little oil.
- Add another spoonful of the tomato sauce to the base of the buns then add the chicken on top with a big dollop of pesto mayo on top.
