Cauliflower and Broccoli Rice Buddha Bowls

You have to love a Buddha bowl. This seriously good-for-you cauliflower super salad is easy and quick to prepare. Packed with nutrition and some really super ingredients. Like Beetroot – a great source of Potassium and Vitamin C. We love it because it’s so keto. Enjoy!

Ingredients
- 70g Cauliflower Rice
- 70g Broccoli Rice
- 5 Spring Onions
- 120g Cherry Tomatoes
- 120g Beetroot
- 130g Feta Cheese (optional – use 120g thinly sliced Mangetout for vegan)
- 2 Mini Peppers
- 1 Avocado
- 20g Sunshine Seed Selection
- Juice of ½ Lemon
- 30ml Olive Oil
- Houmous, to serve
Method
- Cut the beetroot into slices.
- Wipe, trim and thinly slice the spring onions.
- Chop the feta into small chunks and halve the tomatoes.
- Chop the peppers and discard any white pith and seeds.
- Halve the avocado, remove the stone, scoop out the flesh with a spoon and slice.
- Arrange the cauliflower rice, vegetables and cheese in two bowls, keeping each in sections.
- Mix the lemon juice and oil together and drizzle over the top.
- Sprinkle with seeds and serve.
- Great served alongside some Houmous.
- For a vegan version, substitute the feta for 120g thinly sliced mangetout.
