Beef Kofta Pittas

Serves: 6 people | Prep time: 25 minutes | Cooking time: 5 minutes

Ingredients
- 1 Red Pepper
- 1 Tomato
- 1 Red Onion
- 1 Handful Fresh Parsley, Blended
- 500g Beef Mince
- 1 Tbsp Garlic Powder/Puree
- 1 Tsp Ginger Powder/Puree
- 1 Tsp Oregano
- 1/2 Tsp Cumin
- 6 Pittas, Grilled
- Half A Cucumber, Chopped
- 1 Tomato, Sliced
Method
- Place the red pepper, tomato, red onion and parsley into a blender and blitz into a paste. Add this into a bowl with the beef mince and oregano, lemon juice and cumin and mix with a spoon. Add the salt and pepper and chilli flakes if you want a little heat use wet hands to combine it all well.
- Divide the mixture into 12 kofta shapes.
- Add the koftas to a preheated BBQ and grill for 5 minutes on both sides. Alternatively, add these to a frying pan with a little oil and fry for 5 minutes on each side.
- Serve on a wooden serving board with the chopped cucumber, tomato and olives and warmed pittas for people to load themselves.
