Baked Feta and Lemon Gnocchi

An easy and tasty traybake for the whole family!

Ingredients  

  • 150g Feta Cheese
  • 1 Lemon Chopped Into Quarters
  • 250g Cherry Tomatoes
  • 1 Handful Fresh Basil
  • 1 Dried Oregano
  • 4 Cloves Garlic, Chopped
  • 100ml Veg Stock
  • 500g Gnocchi

  • Olive Oil

Method

  1. Preheat oven to 200 degrees then add feta, garlic, tomatoes and lemon to a large baking dish. Add the oregano, season with salt and pepper and drizzle with oil.
  2. Place in oven for 25 minutes. Meanwhile, panfry or airfry your gnocchi with a little oil for 10 minutes until golden and crispy.
  3. Remove feta and tomatoes from oven when time is up, feta should be melty and tomatoes should be charred. Remove the lemons but squeeze the pulp into the feta and tomatoes, add in the stock then use a spoon to mix everything into a creamy sauce.
  4. Add in the gnocchi and basil and serve!
