Bacon and Sweetcorn Fritters

These crispy fritters are as easy to make as they are tasty.

Ingredients
- 240g Specially Selected British Bacon
- 360g Sweet Harvest Sweetcorn
- 120g The Pantry Plain Flour
- 3 Large Free Range Eggs
- 20ml Milk
- 6 Tomatoes
- Black Pepper
- Solesta Sunflower Oil
Method
- Finely chop the bacon then sauté with a little oil in a frying pan until lightly browned.
- Put into a mixing bowl.
- Drain the sweetcorn and add to the chopped bacon, then allow to cool.
- In another bowl lightly whisk the eggs and milk, season with some black pepper then add to the bacon mix.
- Add the flour to the mix slowly, beating as you mix.
- Add some oil to the pan and heat, add tablespoons of the bacon batter and fry on either side until golden brown - do this in batches keeping the cooked ones warm while you cook the rest.
- Cut the tomatoes in half then grill until browned.
- Serve the grilled tomatoes and fritters on a platter for people to help themselves.
