Grapefruit Honey Cucumber and Thyme Tea

This refreshing tea makes a great morning drink.

Ingredients
- 2 Pink Grapefruits
- 1 Lime
- 50ml Squeezy Honey
- 600ml Water
- 12 thick slices of Cucumber
- Sprigs of Fresh Thyme
Method
- Pour the water into a small saucepan and bring to the boil.
- Cut the grapefruits in half, put one half aside and juice the other three.
- Cut the rind off the three squeezed grapefruit halves and discard the white pith.
- Juice the lime.
- Add the grapefruit rinds, juice and lime juice to the pan along with a sprig of thyme.
- Leave to boil for a couple of minutes, then put a lid on the pan and allow it to steep for 5/6 minutes.
- Meanwhile, cut the half of grapefruit into chunks.
- Then, add the honey to the tea and stir through to dissolve.
- Strain into the mugs.
- Add the grapefruit chunks and the cucumber slices, decorate with the fresh thyme sprigs and serve.
