Blueberry Blood Prosecco

Serves:  6 people | Prep time:  15 minutes | Cooking time:  30 minutes

Ingredients

  • 75cl Prosecco
  • 150g Blueberries
  • 4tsp Sugar
  • 100ml Water
  • 6 Cocktail Glasses
  • 6 Syringes

Method

  1. In a small saucepan heat the blueberries, sugar and water. Bring to the boil, then reduce to simmer for 10-15 minutes, stirring occasionally until you have a thick blueberry syrup.
  2. Allow to cool for 30 minutes and pass through a sieve to remove any blueberry skin or lumps.
  3. Fill the syringe with the syrup. Put the filled syringe into a champagne glass.
  4. Top with prosecco and then release the syringe to mix the cocktail.
