Blueberry Blood Prosecco

Ingredients
- 75cl Prosecco
- 150g Blueberries
- 4tsp Sugar
- 100ml Water
- 6 Cocktail Glasses
- 6 Syringes
Method
- In a small saucepan heat the blueberries, sugar and water. Bring to the boil, then reduce to simmer for 10-15 minutes, stirring occasionally until you have a thick blueberry syrup.
- Allow to cool for 30 minutes and pass through a sieve to remove any blueberry skin or lumps.
- Fill the syringe with the syrup. Put the filled syringe into a champagne glass.
- Top with prosecco and then release the syringe to mix the cocktail.
