Toffee Apple Crumble

Homemade toffee apple crumble made with Granny Smith apples and topped with ice cream.

Ingredients

For the filling

  • 900g Granny Smith Apples
  • 75g Toffee Sauce
  • 40g Caster Sugar
  • ½ tsp Ground Cinnamon
  • 2 tsp Cornflour

For the crumble

  • 200g Self Raising Flour
  • 100g Unsalted Butter
  • 50g Oats
  • 70g Demerara Sugar

To serve

  • Toffee Sauce
  • Vanilla Ice Cream

  

Method

  1. Begin by making the filing. Peel and core the apples then chop into 1 inch cubes.
  2. Place the apples into a saucepan along with the caster sugar, toffee sauce and ground cinnamon and cook for 10 minutes until the apples have softened.
  3. Mix the cornflour with 1 tbsp of water, stir into the apples, then place the apples into an oven proof dish.
  4. Pre-heat the oven to 180°C Fan/Gas Mark 6.
  5. In the meantime, make the crumble by rubbing the butter into the flour until the mixture resembles breadcrumbs, then stir in the oats and sugar.
  6. Top the apples with the crumble mixture and bake for 30-40 minutes until golden.
  7. Serve with scoops of ice cream and extra toffee sauce.
