Toffee Apple Crumble

Homemade toffee apple crumble made with Granny Smith apples and topped with ice cream.

Ingredients
For the filling
- 900g Granny Smith Apples
- 75g Toffee Sauce
- 40g Caster Sugar
- ½ tsp Ground Cinnamon
- 2 tsp Cornflour
For the crumble
- 200g Self Raising Flour
- 100g Unsalted Butter
- 50g Oats
- 70g Demerara Sugar
To serve
- Toffee Sauce
- Vanilla Ice Cream
Method
- Begin by making the filing. Peel and core the apples then chop into 1 inch cubes.
- Place the apples into a saucepan along with the caster sugar, toffee sauce and ground cinnamon and cook for 10 minutes until the apples have softened.
- Mix the cornflour with 1 tbsp of water, stir into the apples, then place the apples into an oven proof dish.
- Pre-heat the oven to 180°C Fan/Gas Mark 6.
- In the meantime, make the crumble by rubbing the butter into the flour until the mixture resembles breadcrumbs, then stir in the oats and sugar.
- Top the apples with the crumble mixture and bake for 30-40 minutes until golden.
- Serve with scoops of ice cream and extra toffee sauce.
