Flower Cake Pops

  • 280g Madeira Cake
  • 100g Icing Sugar
  • 50g Salted Butter
  • 1Tsp Milk
  • 1kg Ready To Roll White Icing
  • 8 Drops Green Food Colouring
  • 10-12 Drops Orange Food Colouring
  • 10-12 Drops Yellow Food Colouring
  • 50g Demerara Sugar
  • 12 Cake Pop/Lollipop Sticks (Painted Green)

Method

  1. Using an electric hand mixer or a wooden spoon beat together the butter, icing sugar and milk in a bowl until pale and fluffy.
  2. In a separate bowl crumble the Madeira cake with your fingers until you have a fine crumb, add the buttercream and mix with a wooden spoon until smooth. Divide the mixture into 12 and roll into balls.
  3. Take the white icing, colour 200g green adding the drops of food colouring mix through until it’s completely coloured with no marbling, colour 400g orange and 400g yellow.
  4. Roll out the orange icing into a large thin rectangle and using a 75mm circular cookie cutter cut 12 circles.Cover the cake balls with a circle of orange icing, brushing on a little water to help the icing stick to the cake and gently tease the edges down using your fingers until you have lovely round orange balls.
  5. Take a piece of card and draw a flower template 95mm wide with 8 petals 20mm deep & cut it out. Roll the yellow fondant into a thin rectangle and cut 12 flowers using your template.
  6. Brush each flower with a little water all the way round the centre, place and orange cake ball in the centre of each and gently cup the flower using two hands bringing the petals up around the centre to form a flower.
  7. Take the green icing and shape into 12 long leaves around 40mm long, draw a line down each leaf using a butter knife, brush the base of each with a little water and attach to the flower.
  8. Brush the middle of each flower with a little water and sprinkle on the Demerara sugar.
  9. Carefully lift each flower and insert a cake pop stick in the bottom of each one.
