Ingredients

For the peanut filling:

  • 340g Smooth Peanut Butter
  • A sprinkle of Sea Salt Flakes
  • 2 tbsp Rapeseed Oil

For the squares:

  • 400g Dark Chocolate, broken into pieces
  • 130g Crisp Rice Cereal
  • 100g Walnuts, roughly chopped

Method

  1. Line two 20 x 20cm brownie tins with greaseproof paper.
  2. Take the peanut butter and spoon into a medium-sized bowl, add the oil bit by bit, mix well until you have a smooth gooey butter and stir through the sea salt. Set aside to use as the filling.
  3. Melt the dark chocolate in the microwave in 30 second bursts. Once molten, pour in the crisp rice cereal and ¾ of the walnuts. Mix with a wooden spoon until all the cereal is coated with chocolate.
  4. Spoon the mixture into the lined tins, pressing down with the back of the spoon and flatten the top. Sprinkle over the rest of the walnuts.
  5. Allow this to set in the fridge for 2 hours.
  6. Once set, remove from the tins and cut each crispy cake into 9 squares (18 in total). Sandwich the layers together using the peanut butter filling to create 9 servings.
