Ingredients
For the peanut filling:
- 340g Smooth Peanut Butter
- A sprinkle of Sea Salt Flakes
- 2 tbsp Rapeseed Oil
For the squares:
- 400g Dark Chocolate, broken into pieces
- 130g Crisp Rice Cereal
- 100g Walnuts, roughly chopped
Method
- Line two 20 x 20cm brownie tins with greaseproof paper.
- Take the peanut butter and spoon into a medium-sized bowl, add the oil bit by bit, mix well until you have a smooth gooey butter and stir through the sea salt. Set aside to use as the filling.
- Melt the dark chocolate in the microwave in 30 second bursts. Once molten, pour in the crisp rice cereal and ¾ of the walnuts. Mix with a wooden spoon until all the cereal is coated with chocolate.
- Spoon the mixture into the lined tins, pressing down with the back of the spoon and flatten the top. Sprinkle over the rest of the walnuts.
- Allow this to set in the fridge for 2 hours.
- Once set, remove from the tins and cut each crispy cake into 9 squares (18 in total). Sandwich the layers together using the peanut butter filling to create 9 servings.
