Chocolate Toffee Syrup Pancakes

These indulgent pancakes are a chocolate lovers dream!

Ingredients

  • 250g Plain Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • 2 Medium Eggs
  • 50g Light Brown Soft Sugar
  • 3 tsp Vanilla Essence
  • 50g Butter, melted
  • 1 flat tsp Instant Coffee
  • 70g Dark Chocolate Chips
  • Light oil spray

Filling and decoration:

  • 200g Nutoka
  • 20g Hazelnuts
  • 25g Dark Chocolate Chips
  • Toffee Sauce or Maple Syrup to drizzle

  

Method

  1. Put the milk, vanilla essence, melted butter and eggs in a jug and whisk well.
  2. Put the flour, baking powder, sugar, salt and instant coffee into a food processor and whizz for 1 minute.
  3. Slowly add the milk mixture until you have a thick smooth batter.
  4. Pour into a mixing bowl and add the chocolate chips and stir through.
  5. Spray a non-stick frying pan with the light oil spray and heat the pan.
  6. Put a dessert spoon of the batter in the pan and cook until it bubbles, then flip over and cook the other side. Put to one side and continue until all the batter is used. The mixture makes approximately 20 pancakes.
  7. Spread the Nutoka on the top of the pancakes. Make stacks of 5 pancakes.
  8. Sprinkle over the hazelnuts and chocolate chips and drizzle with your favourite sauce/syrup.
