High Protein Pancake Bowl

Up your protein game with this jam-packed breakfast.

Ingredients

  • 100g Greek Yogurt
  • 45g Self-Raising Flour
  • 100g White Chocolate Protein Pudding
  • 1 golden Egg Yolk
  • 75ml Whole Milk
  • ¼ tsp Baking Powder
  • 80g White Chocolate, roughly chopped
  • 110g Raspberries

To serve:

  • 40g White Chocolate Protein Pudding

  

Method

  1. Preheat the oven to 200°C/180°F/Gas Mark 6.
  2. Take a glass Pyrex bowl and add all the ingredients except the chocolate and the raspberries and whisk until you have a smooth batter. Then, take a wooden spoon and fold in the white chocolate and the raspberries.
  3. Pour equally into two round dishes, around 11cm in diameter and 5cm deep. Cook on the middle shelf of the oven for around 20-25 minutes.
  4. Take the remaining 40g white chocolate protein pudding and microwave in a small heatproof bowl for 10 seconds and drizzle over the pancakes, after they have rested for a few minutes.
