Hash Brown Avocado Toast with Prosciutto

Change up your regular breakfast for this tasty take on the humble hash brown.

Ingredients
- 4 Oakhurst Breakfast Hash Browns
- 3 Eggs
- 1 tbsp Butter
- 1 Avocado
- 1 tbsp Lemon Juice
- 4 slices of Prosciutto
- 30g Feta
- ½ tsp Chilli Flakes
- 1 tbsp Honey
- Pinch of Salt
- Pinch of Pepper
Method
- Pre-heat the oven to Electric 210oC/Fan 190oC/Gas Mark 6.
- Bake the hash browns for 18-20 minutes until crisp and golden.
- When the hash browns are nearly cooked, beat the eggs until smooth and season with a pinch of salt and pepper, then cook in the butter for 2-3 minutes until cooked to your liking.
- Smash the avocado and squeeze over the lemon juice, then place on top of the hash browns.
- Top with the scrambled eggs and prosciutto. Sprinkle the feta and chili flakes over the hash browns and serve with a drizzle of honey.
