Hash Brown Avocado Toast with Prosciutto

Change up your regular breakfast for this tasty take on the humble hash brown.

Ingredients

  • 4 Oakhurst Breakfast Hash Browns
  • 3 Eggs
  • 1 tbsp Butter
  • 1 Avocado
  • 1 tbsp Lemon Juice
  • 4 slices of Prosciutto
  • 30g Feta
  • ½ tsp Chilli Flakes
  • 1 tbsp Honey
  • Pinch of Salt
  • Pinch of Pepper  

  

Method

  1. Pre-heat the oven to Electric 210oC/Fan 190oC/Gas Mark 6.
  2. Bake the hash browns for 18-20 minutes until crisp and golden.
  3. When the hash browns are nearly cooked, beat the eggs until smooth and season with a pinch of salt and pepper, then cook in the butter for 2-3 minutes until cooked to your liking.
  4. Smash the avocado and squeeze over the lemon juice, then place on top of the hash browns.
  5. Top with the scrambled eggs and prosciutto. Sprinkle the feta and chili flakes over the hash browns and serve with a drizzle of honey.
