All Day Breakfast Pastry

Recipe

A wonderful way to serve breakfast with eggs, bacon, spinach and cheese on a pastry bed.

Ingredients

  • 1 pack Ready Rolled Puff Pastry
  • 250g bag of Baby Spinach
  • 1 tsp Butter
  • ½ large Brown Onion, chopped
  • 165 g Grated Cheddar
  • 4 Eggs
  • 3 Rashers of Smoked Streaky Bacon, chopped
  • Fresh Chives and Black Pepper, to serve

  

Method

  1. Pre-heat the oven to 200°C/Fan 180°C/Gas Mark 6.
  2. Place the pastry on a baking sheet and part cook it in the oven for 10 minutes.
  3. Heat the butter in a pan and sauté the onions for 5 minutes.
  4. Add the spinach and continue to cook for another 3-5 minutes, or until the spinach has wilted.
  5. Spread the onion and spinach mixture over the part-baked pastry, leaving 4 indentations for the eggs.
  6. Break an egg into each cavity before sprinkling the grated cheddar and chopped bacon over the rest of the pastry. Bake in the oven for 8-10 minutes.
  7. Remove the pastry from the oven and season with black pepper and chives. Serve immediately.
