Antipasti Christmas Tree Ball

A showstopping starter brimming with delicious deli favourites.

Ingredients

  • 2 x 200g Packs soft plain cheese
  • 2 x 250g Packs mascarpone
  • 100g Gherkins soaked with chilli
  • 1 x 280g Jar sundried tomatoes
  • 1 x Red pepper
  • 10g Fresh parsley
  • 1 x Heaped tsp garlic granules
  • Sea salt and black pepper
  • Sprigs fresh rosemary
  • 100g Each – Specially Selected Sicilian Queen Nocellora Olives, Specially Selected Kalamata Olives, Black Pitted Olives The Deli Lemon and Herb Olives
  • 1 x 145g Pack German salami and smoked cheese selection
  • 1 x 120g Pack spicy salami selection
  • 2 x 75g Packs Specially Selected Goats’ Cheese and Black Pepper Bites

Method

  1. Drain the sundried tomatoes, finely chop half of them and place into a large bowl. Slice the other half into strips and put to one side.
  2. Finely chop the red pepper – discard any seeds and white pith. Finely chop the gherkins, before putting the chopped gherkins and peppers into the bowl. Finely chop the parsley and add to the bowl.
  3. Add in the soft cheese and mascarpone and season with salt, pepper and garlic granules. Mix well and put the mixture in the middle of a large plate.
  4. Using a palate knife shape the mixture into a cone shape before decorating the sides with the different olives and strips of sundried tomato. Add sprigs of rosemary between some of the olives.
  5. Finally fold and roll the different salamis around the base of the tree before allowing to chill in the fridge for an hour.
  6. When serving – sprinkle the biscuit bites around the salamis and serve.
