The Mince Pie Extraordinaire

Home-made mince pie recipe with luxury mincemeat and almonds.

Ingredients

  • 1 pack Specially Selected Ready Rolled Shortcrust Pastry
  • 250g Specially Selected Luxury Mincemeat
  • 70g Perfect for Baking Spread
  • 70g Caster Sugar
  • ½ tsp Almond Essence
  • 1 medium Egg
  • 40g Self Raising Flour
  • 50g Ground Almonds
  • 20g Flaked Almonds
  • Butter to grease the tray

  

Method

  1. Pre-heat the oven to 190°C/375°F/Gas Mark 5.
  2. Lightly grease a 12-hole shallow non-stick bun tray.
  3. Put the flour, sugar, baking spread, ground almonds, almond essence and egg into a food processor and process to a smooth paste.
  4. Unroll the pastry.  Cut 12 circles with an 8cm plain cutter.
  5. Gently press the pastry circles into the bun tray holes.
  6. Divide the mincemeat between the pastry circles.
  7. Top with the almond paste.
  8. Sprinkle over some flaked almonds.
  9. Bake in the oven for 25 minutes.
  10. Allow to cool slightly in the tin before taking out.
