Festive Bruschetta
A flavourful and visually appealing snack.

Ingredients
- 40g Pomegranate seeds
- 30g Dried cranberries
- Zest of 1 clementine
- 1 Baguette, baked and cooled
- 1 tbsp Olive oil
- 200g Brie
- 5g Fresh basil, finely chopped
- Sea salt and cracked black pepper, to season
Method
- Take a medium-sized bowl and combine the pomegranate seeds, cranberries, clementine zest and the basil.
- Take the baguette and slice into 12 pieces, brush with oil and grill both sides lightly.
- Top each piece with a slice of Brie and place under the grill until the cheese melts and turns gooey.
- Remove from the grill and place a teaspoon of the pomegranate mixture on each.
- Season well and serve whilst warm.
