Homemade sweet potato fries using fresh sweet potatoes and topped with chilli and Cheddar cheese.
1 kg Sweet Potatoes
2 tbsp Olive Oil
1 tbsp Cornflour
1 tsp Cayenne Pepper
½ tsp Salt
½ tsp Pepper
150g Mature British Cheddar, grated
400g Leftover Chilli or 400g tin Chilli Con Carne
For the toppings
Small handful Fresh Coriander
Fresh Chilli
Lime Wedges
Pre-heat the oven to 200°C Fan/Gas Mark 7.
Clean and peel the sweet potatoes then slice them into French fries.
Mix the sweet potato fries with the olive oil, cornflour, cayenne pepper, salt and pepper.
Arrange the potatoes in a single layer on a baking tray (you may need to use 2 trays).
Bake for 20 minutes, then flip and bake for an additional 10 minutes.
When the sweet potato fries are cooked and crispy place them on one tray and top with the chilli and grated cheese.
Place back in the oven for 10 minutes until the chilli is hot and the cheese has melted.
Serve topped with fresh coriander, chilli slices and lime wedges.
